Break the cookies and crush them in thin crumbs. 2. Incorporate the butter and mix with your fingers to obtain a sandy texture. 3. Press with a finger the pastry on the bottom of pastry cutters. 4. Put in the freezer during the time you prepare the garniture. 5. In a glass, put a teaspoon of psyllium with two table spoon of water. Mix. 6. In a bowl, mix the mascarpone, the rehydrated psyllium and the raspberry jam. 7. Stir vigorously with a fork. 8. Get the pastry cutters out of the freezer. 9. Fill, little by litthe, the blueberry jam on the pastry cuts. 10. Then the mascarpone to the top. 11. Place two hours on the freezer. 12. Just before serving, remove from the mould on a beautiful plate and decorate with a strawberry.
