Vegetarian Curry Okra Recipe.

Here’s a quick and tasty way to prepare okra or ochro as it’s known in the Caribbean. First we’ll create an aromatic base with diced onion, garlic and curry powder, then we’ll toss in the okra and give it a quick stir-fry. In the Caribbean okra is a very popular vegetable, so we’re always looking for ways to cook and enhance it’s appeal. This curry okra (okra curry for my Guyanese friends) will be a hit on your dinner table.

You’ll Need

1 lb okra
1/4 teaspoon salt
pinch fresh ground black pepper
1 medium onion diced
3 cloves garlic
2 birds eye pepper (or 1/4 scotch bonnet)
1 pimento pepper (akak seasoning pepper)
2 tablespoon veg oil
1 tablespoon madras curry powder

    I allllways air dry my okra, except that I cut it lengthwise so that it dries more quickly! The slimy texture simply neeeever agrees with me.😩

    I followed this recipe but added a tin of chopped tomatoes after adding and cooking the okra. My Punjabi girlfriend was very impressed and said it was amazing.

    Your Dish looks amazing !! I really want to try this recipe, I have all the ingredients except the curry powder, went to Amazono to find the curry powder, it was so many brands for madras, I got confuse, what brand would you suggest, are what brand did you use?     Holly Molly!!! Plastic spatula!! Used a wooden spatula please..more hygienic and natural. Instead rubber/ plastic derived from petroleum..

    Thats not Fry Okra..Its Toast Okra..You don't have take the Slime off.You Have To put Enough Oil ..Make sure its Hot and Stir for ah minute ..The Slime will Stay on the Okra..take the Okra out..and then you lower the heat..and put your Seasoning..And continue..

    Throw in a little bit of rice with that okra like a 16 to 1/4 cup so you just see one or two pieces of rice on each piece of okra jasmine rice

    Dear Chris, Thank you so much for teaching us how to experiment in the kitchen. I love being able to add new recipes to my culinary collection.

    I am British and lives in London, England of Vincentian and Grenadian Parentage, I was raised by my grandmother in the Grenadines island of Bequia. I have a grateful heart and is truly thankful for the knowledge you selflessly share with us in love on the culinary talents God have gifted you with.

    When I saw your Coconut Fish Stew Recipe on Thursday, it was so inspiring I instantly made a list of the ingredients I did not have in my fridge/freezer and cupboard and immediately proceeded to visiting the grocery store.

    By evening, I had re-created your recipe, I added lemongrass and onions to the ingredients you listed; it was scrumptious.

    I learnt: In future I must not pure in the recipe lemon/lime recommended amount instead I must start with a small amount, test it and then add according to my preference.

    You are a blessing to many of us, thank you so much for sharing and encouraging many of us to be creative and versatile in the kitchen.

    I actually love love love the slime in the Okra it is my favourite element of the Okra. If I can't delight in the slimy nature of it then I would be concerned that it is not Okra I'm eating.

    We thank you for teaching us how we can manipulate and make adjustments of food to our palate desire.
