Vegetarian Breakfast Burrito Recipe

Makes 5 burritos – use 2 eggs per burrito to make different quantities

Ingredients:

10 eggs
5 large flour tortillas
2 tablespoons olive oil
1 cup shredded sharp cheddar
1 cup shredded monterey jack
10 slices American cheese
3 sweet peppers sliced
1 small white onion sliced
1/2 cup chunky salsa
Cracked black pepper
Dash salt
Dash red pepper
Cooking spray

Preparation:

1. Saute sweet peppers and onion in olive oil
2. Add salt and red pepper
3. Add cracked pepper and salt to 10 eggs, scramble and add to peppers and onions
4. Add salsa
5. Cook until eggs are just done
6. Spread cheeses on tortilla
7. Microwave for 1 minute
8. Fold tortilla and fry on skillet with cooking spray until golden brown each side

    Unless u are an athlete, eating all that egg and cheese is a RECIPE for heart attack !!!! FYI one egg has all the cholesterol that a normal individual needs in a day

    its called lacto-vegetarian. as opposed to lacto-ovo-vegetarian which is vegetarians who eat eggs.

    Out of all the eggs that Hen lays….very few are fertilized …and are saved for more hens. Most of the eggs we get in supermarkets are unfertilized ie without a baby in it

    @zeedog3000 you are sadly confused. Most vegetarians eat dairy and some eat free range eggs. Vegas do not eat Dairy or free range eggs. In addition, both vegetarians stay away from leather, products tested on animals, soaps that contain animal products, wool etc.

    @arpanbhagat Vegetarians who eat Egg and Dairy are properly called Ovo Lacto Vegetarians but since the majority of Vegetarians are of this type, it is useually shortened to just vegetarian or Veggie. Those who eat dairy but not egg are lacto vegetarians, egg but not milk (if there are any – maybe lactose-intollerant?) are ovo vegetarians and those who eat neither are either Vegetarian or more usually Vegan, to avoid confusion.
