Basically make these things either the night before or wake up earlier that morning or even meal prep for a few days! Try out my Quinoa Black Bean Burritos as well: https://www.youtube.com/watch?v=rMaWiWAg2tE

Black Bean Salsa:
1 can organic black beans drained
1 capsicum diced
1 tomato diced
Coriander bunch diced
2 Spring onion shoots diced
1-2 tbsp lemon juice
Salt and pepper to taste

Refried Beans:
1 can refried pinto beans (I use this brand: https://www.ceres.co.nz/)
1 tbsp water
Pinch salt
1 tbsp cumin powder
1 tsp chilli powder
Small coriander bunch diced
1 Spring onion shoot diced
1/4 cup canned tomatoes

Serve with tortilla chips (I use this brand: http://www.beanfieldssnacks.com/)

Brazil Nut Pesto Pasta:
1 cup fresh basil leaves
1/2 cup spinach leaves
1/2 cup brazil nuts
1 tbsp lemon juice
Pinch of salt
2 tbsp water
Cherry tomatoes
Basil to stir through
Cooked pasta – Pesto makes enough for 4-5 cups cooked pasta

Tofu Burgers
4-5 slices of firm tofu
3 tbsp vegan oyster sauce (you can find it in vegan grocery stores or selected woolworths/coles)
1 tbsp tamari sauce
1 heaped tsp almond butter
1 tbsp maple syrup
1 Spring onion shoot diced

Burger buns
Hummus
Lettuce
Spinach
Avocado
Sesame seeds

    Please don’t eat tofu and spinach together. The two will have a chemical reaction and will cause kidney stones.
