Vegan Scalloped Potatoes | easy recipe!

Today we are making vegan scalloped potatoes! The perfect creamy, l cheesy side dish for any holiday dinner. Get the recipe below and don’t forget to check out my cookbook here: https://itslivb.com/cookbook

♡Recipe:
1 onion, finely chopped
4 lbs potatoes, thinly sliced
1/3 cup vegan butter
1/3 cup all-purpose flour
1-1/2 cups nondairy milk
2 cups vegan chicken broth (or vegetable broth)
1/4 cup nutritional yeast
1 tsp salt
black pepper to taste
paprika (optional to sprinkle overtop)
1 cup vegan cheese, for sprinkling on top

Preheat oven to 375 F.

1. In a pot on medium heat, cook the onions in a drizzle of oil until translucent.
2. Add onions and potatoes to a greased baking pan and stir to combine.
3. Place the pot back on the stove and add the vegan butter. Heat on medium heat until melted. Sprinkle the flour overtop, then whisk to combine. let it cook for about 30 seconds to get rid of the raw flour taste.
4. Slowly add splashed of nondairy milk, whisking until smooth each time to create a thick sauce. Repeat with the broth.
5. Add the salt, nutritional yeast and pepper and whisk to combine. Then pour over the potatoes, using a spoon to smooth out the top and allow the sauce to get through the cracks to the bottom. Sprinkle with paprika (if using).
6. Bake for 45 minutes. Then, add the cheese and bake another 15 minutes until melted and bubbling.
7. Let cool for 10-15 minutes before serving.

    i made this for christmas and it was literally the BEST dish ive ever made, the only difference i did was add a little more salt in the sauce, and i used biocheese on top. definitely recommend this recipe!

I prefer the one that was covered in wrap for 45 mins, then unwrapped for the last 15. Thank you for sharing the recipe.

    I made this recipe yesterday for Christmas dinner (without the shredded cheese) and it was DELICIOUS! My non-vegan family were so surprised that the dish was just as good as the cheesy, milky version they were used to. I used the leftover sauce as my vegan gravy, too! Will definitely be making this recipe again for dinner parties and holidays.

    Looks amazing Liz. I hope to make it for Xmas this year but as others mentioned will definitely be using a Mandolin. I bought my mandolin for $10 probably 15 years ago. You can get a cheap one and they work great. I also do love that this is cashew free. I love cashews but not in every dish. Thanks again!

    Hi Liv, the potatoes look great. I'm probably going to make this for Christmas dinner. Do you mind sharing what vegan cheese shreds you used please? Some shreds do not melt and are very chalky, so I find it helpful to know which one! Thanks.
