    "I think a proper poutine recipe calls for beer"
    Um… why do you think that? News to me. Proper poutine gravy has tomato paste, chicken stock, a good amount of pepper and onion, and cider vinegar. Paprika for smokiness is also something I add. But beer? No, that's not traditional or "proper" at all.

    I'm sorry, but much of your roux was still raw flour. For gravy, your roux should have been at a darker nuttier cook before adding the broth.

    When making a roux, ALWAYS do same amount of fat to flour. If u do more flour than fat, it's gonna be hard to cook out the raw taste of the flour. Plus, u get a dry and lump-like roux. Secondly, a whisk would be far better than a spatula for making a clump-free gravy.

    Maybe tomato paste instead of ketchup so it wouldn't be as sweet. The gravy looks delicious though!

    I made a variation of this and it was very good! For some reason, after I've combined the flour with the butter and added the liquid, the flour gets very clumpy… I don't know what I did wrong here. But I ended up pulsing it in my blender for a few seconds and the clumps went away 🙂
