Hey, guys!
Today I’d like to show you 5 vegan breakfast ideas. If you are looking for something interesting for your breakfast, watch this video. You will find healthy and simple vegan breakfast recipes: protein omelette, banana pancakes, colorful smoothie bowl, tuna sandwich and veggie quesadillas.

RECIPES:

———- #1 Quesadillas with veggies ———-

2 tortillas
1 onion
1 tomato
1 avocado
3 tbsp hummus
salt, pepper
olives, spring onions

———- #2 Smoothie bowl with chia seeds ———-

1 layer: a half banana + 1 cup red&black currants
2 layer: 6 tablespoons chia seeds + 25 tablespoons of vegan milk + 1 tsp fructose + 1 tsp coconut flakes
3 layer: a banana + a bunch of spinach

———- #3 Vegan Omelette with mushrooms ———-

1 medium onion
4 medium mushrooms
3 tbsp chickpea flour + 8 tbsp water + seasonings + salt + 2 extra tbsp chickpea flour
1 tomato
1/2 tsp turmeric
2,5 tbsp flax seeds
fresh greens

———- #4 Healthy vegan pancakes ———-

1 cup oats
1/2 cup sour yoghurt
1 ripe banana
2 tbsp melted coconut butter
2 tbsp maple syrup
1 tsp baking soda
1/4 rice flour

———- #5 Vegan Tuna Sandwich ———-

1/2 can white beans (or chickpeas)
1 tsp hot mustard
1 tsp sour cream
turmeric, salt, pepper, lime juice and greens
any fresh vegetables

    I tried the omelette recipe but by mistake I soaked ground chia seeds in water instead of flax seeds but it worked just the same. Finally after trying many recipes and failing resulting in mush, this one turned out great. I think the secret is not too much water and the flax or chia soaked give it a lift.

    Finally a recipe for thick vegan pancakes! I didn't have rice flour so I used whole wheat pastry flour but will buy some rice flour for next time. Delicious 😋. Every chickpea omelette recipe I've tried so far ended up like uncooked mush in my pan but I never saw a recipe with chia so I'm looking forward to giving this recipe a try. She's really got tempting recipes and her cooking techniques like covering during cooking make all the difference. She's talented. I'm looking forward to learning more of her recipes.
