everyone is using these small chillis and warning people they are hot… they are NOT hot at all even in Thailand. And they have nearly no other chillis there which is so sad. The whole soup should be spicy like if you eat these chillis on their own

Are you not supposed to peel the galangal? How much palm sugar do we add to the dish?

Best fish sauce brand to use is called "Lucky Brand Fish Sauce". It doesnt have such a strong smell as others. Never use fish sauces that are not in a dark brown color. If they are gray, the are different type of fish sauces. Some actually are packaged to be cooked again for other purposes. Dark toned fish sauces are ready to use. As for coconut milk, they're all the same. Some are packaged for certain kinds of purposes like deserts. Look for the chaokoh brand.

Honestly, we are not the Thai experts when it comes to fish sauce. Maybe some of our other viewers can help answer your question. Regarding the coconut milk, we have a friend from Kerala who consumes quite a bit of it. She swears by Renuka brand of coconut milk available at Indian grocery stores.

a solution for those who don't want to avoid certain things while they're eating, I have a mesh net strainer that I use to make dashima stalk with anchovies, since you can't eat the dried anchovy after it's used. You can usually buy them at cooking supply stores! =D I bought mine at the Korean market though since it's 5 dollars cheaper…

I don't get why everyone is so bitter about a person asking if she was pregnant or not. It's not that big a deal. Hell, in most cases it's actually a compliment because pregnant women have a really unique glow that really makes them stand out more beautifully. But anyways, I LOVE this recipe. I'd love to try a lot of your recipes but I have a hard time finding a lot of the ingredients.
