NO SHEPHERDS WERE HARMED IN THE MAKING OF THIS VIDEO

This is a real hearty, wholesome dish that will satisfy most carnivores. It is a vegan dish so if you like cheese or are cooking for a group of carnivores then putting some grated cheese on top of the mashed potato before baking in the oven will make the dish richer!

Sorry we don’t have a written recipe for this! We’re currently working on an updated and improved version which will feature in our new book (to be launched in Spring 2018)… So please bear with us until then!

    Shepherd’s Pie

    INGREDIENTS
     4 large potatoes
     2 red onions
     4 cloves of garlic
     1 carrot
     1 cup peas
     ½ capsicum
     3 cups mushrooms
     Salt
     2 regular sized tins of chopped tomatoes
     1 can lentils, well drained
     2 tsp smoked paprika
     ½ tsp black pepper
     4 tsp tamari
     Bunch of chopped parsley

    POTATOES
     100ml coconut milk
     ½ tsp salt
     Pinch black pepper

    METHOD
     Pre heat oven to 180 degrees C.
     Cut potatoes into small chunks. Place into a pot of boiling water and boil.
     Cut the red onion and garlic. Hat a pan with a glug of oil. Add onion and garlic to the pan. Cook for 5 minutes on a high heat.
     Cut the veggies then add to the pan. Add a heavy pinch of salt and continue to cook for another 4 minutes.
     Add in chopped tomatoes, well drained lentils and paprika, pepper, tamari
     Bring to the boil then let it reduce for 15 minutes.
     As the dish is reducing, add the parsley.
     Take the potatoes off the heat and drain them. Add coconut milk, salt and pepper then mash.
     Fill a large pie dish with the filling and top with potato. Bake for 20 minutes.

    This whas really good! I added more mashed patatoes and replaced the parsnips with mushrooms and added alot of thyme.
    This whas my first sheperds pie since going vegan (two months ago)

    I was out of ingredients and mishmashed this recipe with your cottage pie recipe. I only had dry lentils. And only a cup and a half of brown. So instead I used half brown lentils half yellow (3 cups total) and cooked them in a pressure cooker with veggie stock. Totally eliminated the need for a binding agent like rice or couscous. Cooked my veg (leeks, tinned diced tomatoes, garlic, salt, Tamari, shiitake mushrooms and two whole portobellos) and dumped the lentils in the pan to marry all the flavours once they finished in the pressure cooker. And done. I also used red potatoes instead and left the skins on. I think next time I might use a mix of potatoes and turnips. Came out really well and was a hit with my family at Christmas. All of them are meat eaters and none of them have ever heard of Shepard or Cottage pie. Or lentils. Or leeks. Thanks so much for your video!! Totally deviated. But it totally saved my Christmas dinner as I was out of groceries and the only vegan item at Christmas dinner were the bread rolls. Thanks again!!

    I would advise to put coconut milk (full fat) to the mashed potatoes with a bit of olive oil and a bit of garlic powder. Whenever I make mashed potatoes even if its not for a vegan dish I still use coconut milk. It make the potatoes waaaay creamier its unbelievable! Thanx for the vid!

    Grew up eating Shepherds Pie, as many do. Now that I've moved out of home I've been craving a hearty dish like this. This recipe is great. Reminds me of home and is suitable for my plant-based diet. Thank you Happy Pear!

    My dad died at 69, ate a lot of meat, greasy, unhealthy stuff. My granddad used to tell him, son food will be the death of you. He had stomach cancer, was operated on, was told he had 6 months to live (when he was 60) he went vegan and the 6 months turned into 35 years…..(and he was still going strong if you catch my drift) until the age of 90. He said he wasn't too happy about that the last 5 years of his life  🙂
