Priya is back in the Bon Appétit Test Kitchen to make pav bhaji, a popular Indian street food. The recipe is made of two parts: the ‘pav’ (in this case Martin’s Potato Rolls) and the ‘bhaji’ (vegetable gravy). These two parts come together to make something like a vegetarian sloppy joe!

Hi, it's Priya!! If you're looking for other Indian-ish recipes like this Pav Bhaji, you can pre-order my book (which is conveniently called….Indian-ish) on Amazon right over here: https://www.amazon.com/Indian-ish-Recipes-Antics-Modern-American/dp/1328482472/ref=sr_1_1?ie=UTF8&qid=1536589970&sr=8-1&keywords=indianish

It's not your lack of working out, Its that you used a microwave to make a not so perfect potato

Lovd her but a pav bhaji isn’t a pav bhaji until it’s made in ghee and butter… i like her version but not as good as the the original one :/

One thing I did, instead of topping the rolls and sprinkling red onions on top, dip some Calidad tortilla chips into the mix, like guac, it’s super delicious that way too ❤️

idk about it being a vegetarian sloppy Joe haha but I love her ahhhh Priya is so bright and cute. even though many people are commenting that this doesn't resemble the traditional dish, I just think it's cool that the BA test kitchen is working to incorporate a wider variety of cultures and introducing the spices and ideas associated with those cultures' cuisines for people who have never known them, like me (: also her cook book is called "Indian-ish" not "Traditional Indian Cuisine"

Not trying to spread hate or pull down a fellow Indian. But Priya, all your Indian recipes are so wrong and not at all Indian. Please don't cook something if you don't know the authentic recipe. This is not Indian food. Not even Indian-ish.
