An easy dish to try at your kitchen with minimum ingredients. Vegetable Poha Cutlet can also be served at parties to guest. Less oil is used in this recipe as it is just shallow fried. Ingredients: 2 cups THIN beaten rice (poha) 1 LARGE boiled potatoes ¼ cup paneer grated ¼ cup Grated carrot Salt to taste ½ tsp Black pepper powder ½ tsp Garam masala powder ½tsp Chat masala powder ½ tsp Red chilly flakes 1 inch piece of Chopped ginger Coriander leaves/cilantro 2 tsp Lemon juice 3 tsp All purpose flour Bread crumbs Oil for shallow frying How to make: 1. Place the beaten rice in a sieve and wash it thoroughly with water for a few seconds. Keep aside for 10 minutes to make it soft. 2. Grate the boiled potatoes or you can finely mashed it also. Grate paneer. 3. Put grated potatoes in a bowl and add soaked poha, grated carrot, grated paneer or chena, Salt to taste, Black pepper powder, Garam masala powder, Chat masala powder, Red chilly flakes, Grated ginger, Coriander leaves and lastly add lemon juice. Mix all the ingredients until well combined. 4. Take a generous portion of dough and shape each into a cutlet or give desired shape of your choice. Prepare rest of the cutlets in the same way. 5. Put all purpose flour/maida in a bowl and make thin paste with water. Add salt and black pepper, mix it well till no lumps. 6. Dip each cutlet one by one with flour paste and then coat with bread crumbs all around the cutlet. Prepare rest of the cutlets in the same way. 7. Take a pan and add oil for shallow frying. In hot oil, add prepared cutlets and shallow fry until golden brown from both the sides and crisp. Take out in a plate and serve these cutlets with favorite sauce/chutney along with tea.
