Minestrone is basically leftover soup. Anything goes. I like to add cubed salami and cannelini beans to mine.

You can tell that this was right after mom passed away. John lost his humor during that time.

Shell beans is what they're called and we grow most of the country's shell beans in Maine where I was born and raised.

Bacon, spanish onion, ( replace celery – green pepper), garlic, chicken broth, can plum tomatoes, white kidney beans, cabbage, ( red lentils ), Swiss chard ( if possible ), detilini pasta, thats my version as im allergic to celery and white kidney beans slow down the rate of carb absorption for weight loss and red lentils are the best lentils for protein.

Just made this for my son who is a vegan. Skipped the meat and added a little smoked paprika. Chef, so happy you encourage folks to use what's on hand. These are peasant recipes. Said with honor and respect…

Since red bell pepper was suggested and I am a vegetarian I am going to add a half teaspoon or more of smoked paprika just because I like it, and vegetable broth. Ditalini is cute.

This is very close to what my mother use to make. I remember having to go the local Italian deli next door and get the sausage & mozzarella they made. She would dice up the mozzarella and add a bit to the top of the finished soup, along with the Romano (she preferred it to Parmesan)…warm french bread from the Roma Bakery at the end of our block, and I was feasting! You are my very favorite chef on YouTube. Thanks for bringing home!

Just finished making this. Ingredients are $20. Makes a 8-10 quart pot of soup. Turned out delicious. Next time I would add my canned beans toward the end so they don’t over cook.
