How To Make Vegetarian Ramen (Recipe) ベジタリアンラーメンの作り方(レシピ)

Spicy and rich vegetarian ramen recipe made with soy milk and vegetarian dashi. This ramen broth is super rich and milky, and it just might trick you thinking it’s Tonkotsu broth!

Prep Time: 5 mins
Cook Time: 15 mins
Yield: Serve 1 (If you want to make more than one serving, simply multiply the quantities of ingredients by the number of servings you wish to make.)

Ingredients:

For Vegetarian Dashi

¾ cup water
1 1”x2” (2.5 x 5 cm) kombu
1 dried shiitake mushroom

For Soup

1 Tbsp. sesame seeds
2 cloves garlic
½” ginger
Scallion (white part)
2 tsp. sesame oil
2 tsp. chili bean paste
2 tsp. miso
1 Tbsp. sake
2 tsp. soy sauce
1 cup unsweetened soy milk
½ cup dashi
½ tsp. Kosher salt
Dash of white pepper

For Ramen

1 serving ramen noodles

For Ramen Toppings

½ Ramen egg (RECIPE: check my video) (omit for Vegan)
Spicy Bean Sprout Salad (RECIPE: check my video)
Homemade vegetarian kimchi
Corn
Scallion (green part)

    I have discovered this recipe few days ago. Today, I have made it. It was delicious, very easy to make compared to other recipe with meat. I used a dashi powder, for a rapidity. Thank you, I will try your other recipes. Arigato gozaimasu,gotshosama deshita

    People who are saying this is a bit much to prepare: Replacing dashi with ready made powdered/granulated/liquid concentrate kombu dashi saves a lot of time 🙂 I also use shiitake mushroom sauce to replace the shiitake broth when I'm lazy, which is often sold as vegetarian oyster sauce at asian food sections. The thing about this though is that your soup gets quite salty before it gets plenty of umami flavour so it is always worth doing the extra work to brew your own dashi broth ^_^

    it looks great, nice and easy but why do you use that corn, I come from the land of the corn and definetely that is not a good corn, I saw using the same corn in other recipes, I was just wondering if there was a reason, thank you for the recipe

    We did this recipe tonight (with real dashi so not vegetarian) and it is really good!! It is quick and easy to make and has much more complex flavors than I expected. We threw some kimchi and a couple of soft boiled eggs on top for the hell of it.

    Nice recipe! I bought almost all ingredients, but I did not find soy milk without sugar. Can I use other vegetal milk, like almond or cashew nut milk? Thank you!

    I made this with a few substitutions and it still came out AMAZING! You saved my life – Thank you so much! <3 (I didn't use soy milk, I used a chili fermented black bean paste instead of Sichuan Doubanjiang and I used a vegan butter instead of sesame oil – and surprisingly it was intensely flavourful!) Vegan ramen – Yes, I've had that 🙂

    Hey, JOC! I've been craving for some good ramen and made this today. Was a little skeptical on how good it would be, but it is absolutely delicious. Even without the dashi, it's lovely, and the dashi gave it more depth. I left out the kombu as my partner doesn't like seaweed-tasting stuff (used way more mushrooms instead), and used Chinese wine (hua tiao) in place of sake. This will now be my go-to recipe for ramen. I have vegetarian friends who I can't wait to tell them about this. Thanks so much.

    This recipe is completely vegetarian, people need to learn the difference between vegetarian and vegan instead of complaining that it's not vegetarian. And the dashi is the stock she made with kombu (kelp) and dried shiitake mushroom. Dashi often contains dried fish but not always and she showed you how to make vegetarian dashi.

    i am subscribing and saving your recipes till the time i find a good source of Asian groceries and a steady source at that. u now it pisses me that India being a part of Asia itself doesnt have a proper Asian grocery store. Being so close to China, Thailand and East Asia in general one would expect Indian markets to be flooded with Asian ingredients, vegggies and condiments. But poor me…..i have to bang my head even to get a simple ingredient. But still i am a big fan of Asian cuisine.

    Ok I understand its a difficult concept for meat eaters to grasp but EGGS ARE NOT VEGETARIAN!!!! THEY DONT GROW ON TREES OR UNDER THE GROUND!!!
