Healthy Vegan Snacks That Are Quick & Easy!

I asked y’all a couple days ago if you would rather see a couple healthy vegan snack ideas or vegan desserts and healthy vegan snacks won!

These healthy vegan snacks are perfect when you are on the go and have no time to cook or just simple don’t want to spend hours in the kitchen! I hope y’all enjoy this video and if you recreate these snacks, tag me on Instagram so I can see(:

CHOCOLATE PEANUT BUTTER ENERGY BALLS

INGREDIENTS:
-1 cup pitted dates
-3 Tbsp peanut butter or almond butter
-1/4 cup vegan chocolate or vegan chocolate chips
-1 Tbsp Chia seeds or flax seeds (optional)
-2/3 cups of oats

INSTRUCTIONS:
– Soak dates in warm water for 10-15 minutes

-Pulse dates in food processor or blender until they are in small pieces

-Add oats, chocolate, chia sees, and peanut butter and pulse or mix until combined.

-Carefully roll into 1-inch balls using the warmth of your hand.

-Pop into fridge or freezer for 15-20 minutes. ENJOY(:

“TUNA” SANDWICH

INGRIDENTS:

-2 (15oz) cans of chickpeas or 3 cups of cooked chickpeas
-1 shredded carrot
-1/4 cup Vegan Mayo
-1/2 Avocado
-2 slices of your favorite bread
*optional extras: dill pickles, raisins, black celery, etc*

INSTRUCTIONS:

-Drain and rinse chickpeas. Pat dry with towel to absorb extra water.

-Roughly mash the chickpeas in a medium size bowl.

– Add the chopped up carrots, avocado, and any extras you would like to add. Mix together with a fork or spatula.

– Add mayo to desired texture of creaminess. The more mayo, the creamier

-Put in frigde for 1 hour to let flavors meld together.

-Put on bread for a sandwich or you can use it on crackers for a dip!
