Fried Eggplant Curry (Sri Lankan dish) Easy Vegan & Vegetarian recipe

Today I’m making Fried Eggplant curry, it is a favourite for vegetarians and meat lovers! This popular curry wakes up your taste buds with all its spices and richness in flavour.

Traditionally the eggplants are deep fried however you can roast them instead. Roast the eggplants without any seasoning at 220 degree Celsius for about 15 minutes or until they turn golden brown.

Here are the ingredients you need:

1 cup of chopped onions
1/2 tsp of mustard seeds
2 tsp of curry chili powder
1 tsp of salt
2 tbsp of oil
1 cup of water
3/4 cup of tomato (chopped)
4 cloves of garlic (crushed)
5 chinese eggplant
1.5″ cube of tamarind paste (or 2 tbsp of tamarind concentrate)
3 stalks of curry leaves

*You can modify the amount of salt and spice to your preference.
