EASY MEAL PREP | VEGETARIAN LASAGNA | ROASTED PUMPKIN SOUP | OSTER BLENDER RECIPES

Hi superstar food preppers! Are you stuck for vegetarian meal prep ideas? Here are some recipes I made recently! Enjoy! Lots of love Lozza xXx

♥ ROASTED PUMPKIN SOUP ♥
4 servings

INGREDIENTS:

2 leeks (chopped)
2 cloves of garlic (peeled)
1.5kg butternut pumpkin (diced)
1/4 c olive oil
6 cups of vegetable stock (I used 3 veggie stock cubes but it depends on the instructions on your stock packet)
salt and pepper to taste

Preheat oven 180C or 350F

Roast your leeks, pumpkin, garlic and olive oil in a tray covered in tin foil for 40 minutes or until tender.

Blend the veggies with the stock, salt and pepper. You may have to do this in two batches depending on how large your blender is.

Stir in creme fraiche or Greek yoghurt and sprinkle with some pumpkin seeds and sage!

♥ SAGE AND WALNUT PESTO ♥

Blend these ingredients for 30 seconds:

2 small bunches of fresh sage
3/4 c parmesan cheese
3/4 c roasted walnuts
1/2 c olive oil
2 tablespoons of lemon juice
2 teaspoon lemon zest
salt and pepper

♥ DECONSTRUCTED VEGETABLE LASAGNA ♥
6 servings

INGREDIENTS

5 zucchini (sliced thinly with a wide potato peeler to get flat strips)
400 g of mushrooms (but use whatever veggies you like!)
Extra cheese for sprinkling on top!

To make the white cheese sauce blend together:
2 small onions
1 large egg
1.5 cups or 360g cottage cheese
50g parmesan cheese

To make the red tomato sauce, mix together:
28 ounce (795g) can whole peeled tomatoes well drained
6 ounce (170g) can tomato paste
2 peeled garlic cloves
salt and pepper

1. Layer your veggies, cheese sauce and tomato sauce and repeat.

2. Sprinkle cheese on top once all your ingredients are used up.

3. Bake for 50 minutes until your lasagna veggie bake is hot and bubbly!

    I have a hard time figuring out what to take for lunch to school that doesn't need to be heaten up before eating. I'm vegetarian. Sandwiches are OK but eating them everyday is boring. I want some change. However, some foods that I like when they are hot, I don't like when they are cold- I tried cold spaghetti with spinach once, I also prefer warm millet and rice over cold millet and cold rice. It should be something very quick to make. If anyone knows any vegetarian meals that taste good cold it would be very helpful. Thanks.

    cut leeks in half long length wise soak in water for 10 minutes then seperate leaves rinse clean

    Another great video Lozza!! About the leeks, cut them length wise and soak in water for a bit, it should help clean the dirt and grit deep in between the layers! Can't wait for your next video! 🙂

    Love your channel! Thanks for another great recipe! This soup would also be delicious with coconut milk and curry! I also made it once with blue cheese crumbles on top. Yum! Once you slice the zucchini you can sprinkle some salt and let it draw out the excess water for 15 mins or so.

    I like this soup recipe, I might invest in a hand blender instead to save me the trouble of washing the different parts of a blender. I always have so much trouble reducing the water in my zucchini lasagna…one of these days I am going to make one that's actually dry!

    I cut the leeks in half lengthwise and then cut them into 1" sections. Then put them in bowl of water and wash them, the sections should come apart and if you leave them in the water for a couple of minutes, the dirt should sink to the bottom of the bowl. Hope that makes sense 🙂

    I don't have any leek cleaning tips..they are a pain , i agree. That soup looks delicious..easy too. I may give it a go sometime this fall. Oh, and that lasagna..who doesn't love lasagna …yumm. Looking forward to the dessert recipe. 🙂 x
