4 Easy, On-The-Go Vegan Snacks ANYONE Can Make!

CORN FLAKES BARS
-2 cups corn flakes
-1/2 cup pb
-1/3 cup liquid sweetener (i used agave)
-1/2 tsp salt (if using unsalted pb
-1/4 cup coconut

-stir together pb and liquid sweetener. heat mixture if needed.
-pour over cereal and mix until all pieces are evenly coated
-mix in half of the coconut flakes
-press into a dish lined with parchment paper
-sprinkle the other half of the coconut flakes on top, as well as a pinch of salt
-refrigerate for at least 30 minutes before slicing and serving

CRISPY RICE ENERGY BITES
-1.5 cup whole rolled oats (chopped lightly)
-1.5 cup crispy rice cereal
-1/2 cup shredded coconut
-1/4 cup chia seeds
-1/4 cup flax seeds
-1/2 cup natural peanut butter
-1/4 cup pumpkin puree
-1/4 cup liquid sweetener
-1/4 cup mini chocolate chips

-stir together pb, pumpkin, and sweetener in a small mixing bowl until smooth
-combine dry ingredients in a large bowl
-pour PB mixture over dry ingredients and mix until evenly combined
-form small balls with 2 TBSP of mixture and place in storage container
-you can also just press the mixture into a dish lined with parchment paper to make chewy granola bars
-chill for at least 30 min

LUNA-TYPE BARS
*adapted from Chocolate Covered Katie*
-3 cups rice cereal
-2 tsp vanilla extract
-1/2 tsp salt
-1/2 cup + 2 tbsp nut butter
-1/2 cup sticky sweetener
-2-3 tbsp protein powder (i used vanilla flavor)
melted chocolate chips

-mix cereal and protein powder
-mix pb, sweetener, extract, and salt in a bowl melt and pour over cereal and powder
-smash and smash the crisps
-line a pan with parchment + spread evenly in the pan
-place parchment on top of mixture and press down as firmly
-spread the melted chocolate on top and freeze for at least 30 minutes before slicing and serving

MILK & CEREAL BARS
*adapted from Chocolate Covered Katie*
-1 cup cereal
-packed 1/2 cup oat flour (after blending)
-1/4 tsp salt
-3 tbsp nut butter
-5 tbsp agave
-1/3 cup cereal
-1/4 cup plant-based yogurt

-combine 1 cup cereal, oat flour and salt in mixing bowl
-in a separate large bowl, combine the nut butter and sweetener
-pour dry into wet and stir until even
-line baking dish and pour batter into dish
-using a second sheet of parchment, press batter down hard into the dish
-press remaining 1/3 cup cereal on top then stick in freezer before cutting into bars
*optional* frost w/yogurt and refrigerate for another 20-30 minutes before serving

    These look awesome! I wish there was a way to add like greens powder or protein powder to the bars, so I could eat these as an alternative to raw broccoli and cauliflower with dip. Thanks for sharing!!!

    you know what i do with that peanut butter + sweetener from the first recipe ? i mix it with oats and bake it in theoven and it makes THES BEST PB GRANOLA EVER
