RECIPES

Potato Hash Stack
– Bake for 20 minutes or until golden brown at 200 degrees celsius
Ingredients:
4-5 small/medium potatoes (grated + water squeezed out – nut milk bag works great)
1 tsp mixed herbs
Cracked pepper
1/4 tsp chilli powder
1 tbsp nutritional yeast
2 tbsp rice flour
(add vegan cheese if you like)

Chickpea Pancake
– Cook for 2-3 mins until bubbles appear then fold and flip and cook for another 5 mins (on low-medium heat)
Ingredients:
1/2 onion
4-5 button mushrooms
1 capsicum
spinach
1 + 1/4 cup besan flour (chickpea flour)
1 tsp turmeric
1 tsp oregano
1 tsp coriander
1 tsp pepper
1/4 tsp chilli powder
1 tbsp nutritional yeast
1/2 cup water
1/2 cup soy milk
1 tsp apple cider vinegar
1-2 tbsp arrowroot starch (forgot to show in video)

I tried also adding baking powder to half the mix but made it a bit weird so I’ll have to try again that way but this recipe worked great!

Tofu Frittata
– Bake at 200 degrees celsius for 30-40 mins
Ingredients:
1 onion
2 garlic cloves
2-3 brown mushrooms
1/2 cup cooked kale/spinach
10 cherry tomatoes
500g firm tofu
1/2 cup soy milk (1/2-3/4 more to thin)
2-3 tbsp nutritional yeast
2 tsp turmeric
Cracked pepper
1 tsp coriander
1/2 tsp chilli
1 tbsp arrowroot starch
1-2 tsp yellow mustard

Hope you enjoy! Be sure to tag me @tessbegg on instagram to show me your creations of these recipes and I’ll post the photos on my insta story!

Hi, Tess! Thanks for sharing your recipes! I hope you don't mind me adding something to the recipe of the pancake. It is good to add the filling on the dark brown side of the pancake and cook the other part well through (until it also gets nice and dark brown).
If the chickpea batter (inside part) is too creamy and not well cooked, it might cause some digestive problems (uncooked chickpeas :()

    Hey Tess!

I've been obsessed with your videos for a long while now! To the point where last year I flew myself to Sydney from the GC to spend my 19th birthday hanging out at Bondi. And after your recommendations, I also got to celebrate my 19th eating some delicious goodness from Speedos!

Just want to ask one thing though! Is there any possibility you could post some more 'at home workout' videos? Especially, isolation workouts. I've had to recently cancel my gym membership (poor uni student here cannot afford it 😂😩). And I won't have access to weights anymore 🙁

    Love the vids!

I love the fact that these are hardier breakfast foods cause I often feel like vegan breakfasts just don't keep me full for that long cause they lack in protein (usually there from milk, eggs, bacon etc.) plus I'm so bored of cereal, oatmeal and toast😂 so thank you❤
